Black Bean Brownie Pudding [dairy-free] [vegan]

Having trouble getting your beans in? Try this Black Bean Brownie Pudding! It’s dairy-free and loaded with protein and fiber. Has 1/4 cup of black beans in each serving, and you can’t tell!

Ingredients

  • 1 cup cooked black beans I used ones that I cooked in the Instant Pot, frozen them, then defrosted them for this recipe
  • 16 oz silken tofu I used Simple Truth Organic from Kroger
  • 1/3 cup cacao powder more if you want it to be dark chocolatey
  • 1/3-2/3 cup date sugar or coconut sugar granulated sugar not liquid
  • 1 Tablespoon agave or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Blend all ingredients for about 2 minutes in a high-speed blender (like a Vitamix) until smooth and creamy. Scrape down the sides a time or two to make sure everything is incorporated. Taste for sweetness. Add more sweetener if desired. Chill before serving.
