
Black Bean Brownie Pudding [dairy-free] [vegan]
Having trouble getting your beans in? Try this Black Bean Brownie Pudding! It’s dairy-free and loaded with protein and fiber. Has 1/4 cup of black beans in each serving, and you can’t tell!

Ingredients
- 1 cup cooked black beans I used ones that I cooked in the Instant Pot, frozen them, then defrosted them for this recipe
- 16 oz silken tofu I used Simple Truth Organic from Kroger
- 1/3 cup cacao powder more if you want it to be dark chocolatey
- 1/3-2/3 cup date sugar or coconut sugar granulated sugar not liquid
- 1 Tablespoon agave or maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Blend all ingredients for about 2 minutes in a high-speed blender (like a Vitamix) until smooth and creamy. Scrape down the sides a time or two to make sure everything is incorporated. Taste for sweetness. Add more sweetener if desired. Chill before serving.
