Blackberry Chia Jam
I make this jam with low-glycemic sweeteners like coconut sugar and agave, but you can replace it with any kind of sweetener you like.
Ingredients
- 1 quart bag of fresh or previously frozen blackberries, washed well
- 1 cup coconut sugar
- 2-3 Tablespoons agave
- 2 teaspoons fresh lemon juice
- 3 Tablespoons chia seeds
Instructions
- In a medium saucepan, cook blackberries, coconut sugar, agave, and lemon juice down on a low boil for about 8-10 minutes, mashing the berries with a potato masher after about 5 minutes. DO NOT ADD ANY WATER!!

- Stir in chia seeds and cook over low heat for about 5-7 minutes until jam thickens. Cool to room temperature. Pour into jars that had been washed in the dishwasher and are completely clean. Refrigerate.

- Can be stored in the fridge for up to 2 weeks or frozen with airtight lids.
