Asian-Inspired Mason Jar Salad

Mason jar salads are great for taking to work or prepping up several for lunches. Simply layer (from the bottom up!) a quart-sized Mason jar with the ingredients listed below. You can find the recipe for the Curried Maple Walnuts here. You might want to make those in advance before preparing the salads.

Equipment

  • Mason-Style Quart-Sized Jar

Ingredients

  • 1/4 cup of the oil-free dressing (see recipe below)
  • 1/4-1/2 cup chickpeas
  • 1/4 cup carrots sliced
  • 1/2 cup red cabbage shredded
  • 1/4 cup red/orange/yellow bell pepper sliced
  • 2 T dried cranberries
  • 1 T. Curried Maple Walnuts chopped (link to recipe below)
  • 1+ cups baby spinach (or other chopped greens)

Instructions

  • To make the oil-free, Asian-inspired dressing, mix together 1/4 cup of each of the following in a small jar:
  • low sodium soy sauce
  • maple syrup
  • rice vinegar
  • fresh lemon juice
  • plus
  • 1/2 t. chili-garlic sauce or red chili flakes
