Vegan Matzo Brei
Occasionally, I like to have Matzo Brei for breakfast. My mom used to make it for us with eggs, oil and sugary jelly, but this is a healthier egg-free, oil-free, sugar-free version!
Servings: 1 serving
Equipment
- small mixing bowl
- small colander
- nonstick skillet
Ingredients
- 2 pieces (full squares) of whole wheat matzo (I use Yehuda brand)
- warm water
- 1 T ground flaxseed
- salt to taste
- jelly or jam
Instructions
- Break up 2 whole wheat matzo into a small mixing bowl. Pour some boiling water over soften them. Drain water off in a small colander and place matzoh back into bowl. Add 1 T of ground flaxseed and a few pinches of salt. Mix together well.
- In a nonstick skillet, cook matzo brie over medium heat. Flip pieces a few times after they cook for about 3-4 minutes initially. Continue to cook until desired consistency. Plate and serve with jelly or jam for dipping.
