Healthy Strawberry Pudding
Servings: 4 servings
- 1 pkg Mori Nu Firm or Extra-Firm Silken Tofu (shelf-stable)
- 1 1.2-oz pkg freeze-dried strawberries (I bought mine at Aldi)
- 3-4 Medjool Dates (I used 3)
- 1/4 cup non-dairy milk (or more if you like your pudding less thick)
- Blend all ingredients in a high-speed blender until smooth and creamy. Place in an airtight container and chill before serving.
