Vegan Red Beans and Rice

  • Pressure Cooker


  • 1 pound dried light red kidney beans soaked 8 hours or overnight then rinsed
  • 5 cups water 5 cups
  • 1 green bell pepper chopped
  • 1 medium onion chopped
  • 3 celery stalks chopped
  • 3 garlic cloves chopped
  • 1 jalapeno seeded and chopped (optional)
  • 1/2 t thyme
  • 1 t oregano
  • 1/2 t smoked paprika
  • 2 t liquid smoke
  • 1-3 tablespoons Creole seasoning Slap Ya Mama is best!
  • Hot cooked rice


  • Dump everything (EXCEPT the rice!) into the electric pressure cooker and set the pressure manually to 30 minutes with NATURAL RELEASE. Open the top when it has released.
  • NOTE: If the "gravy" is too thin, you can click on the saute button and evaporate some of the liquid and it will thicken. Just make sure to stir it. If it's too thick, add a bit more water to the "gravy." You can also blend some of the beans with a bit of the liquid and add it back to the pot to thicken the gravy.
