Dark Chocolate Crunch Bites
These remind me of a Nestles Crunch Bar! NOTE: You must use gooey dates for this recipe, but DO NOT soak them in water first. They should be easy to press and mash between your fingers.
Ingredients
- 15 GOOEY Medjool dates pitted
- 1 1/2 cup dairy-free (vegan) dark chocolate chips
- 1 1/2 cup Grape Nuts cereal
- 1/4 tsp sea salt
Instructions
- Blend the pitted dates in a high-speed blender or food processor until they become a paste.
- In a microwavable-safe, medium-sized bowl, melt chocolate chips in a microwave on 70% power for 45 seconds, stir, and cook for 45 more seconds. Stir until smooth.
- Add date paste to the bowl of melted chips and stir until incorporated.

- Add the Grape Nuts cereal and salt into the chocolate-date paste mixture and stir until incorporated.

- Drop mixture onto wax paper in balls using a small- medium cookie scoop.Chill until firm.Serve!
