Creamy Salsa Verde Enchilada Sauce
This sauce is fantastic topping any vegetable-based enchiladas! Our favorite sauce to use in this recipe is Taco Bell Verde sauce because it's very mild. Decide the spiciness level you want and purchase the verde sauce accordingly. The cashews will temper the "heat" slightly, but don't count on them to reduce it much.
- High-Speed Blender
- Two-7.5 oz bottles Taco Bell Verde Sauce or 15 oz. of any salsa verde sauce you like
- 1/2 raw cashews
- 1/2 cup water
- Blend all ingredients until smooth and creamy in a high-speed blender.
- Pour over enchiladas, cover with foil, and bake according to your recipe directions.
