Autumn Apple Roll-Ups
No oil needed to make this delicious dessert!
Equipment
- Air Fryer or Convection Oven
Ingredients
- 3 Fuji apples chopped into 1/4″ chunks (do not remove peels)
- 2 t Frontier Foods pumpkin spice seasoning
- 2 gooey Medjool dates chopped
- 1 T coconut sugar
- pinch of Himalayan pink salt
- Vegan egg roll wrappers (or dumpling wrappers)
- 1/4 cup soy milk for brushing on the tops
- mix of raw sugar and cinnamon for sprinkling on top
Instructions
- In a small saucepan, add the apples, pumpkin pie spice, chopped dates, coconut sugar, a small amount (2-3 T) of water, and salt. Cook over medium heat until fork tender (but not mushy). Add more water while cooking to keep the apples cooking, but don’t overdo it. You want the sauce around the apples to be like a syrup. Let the apples mixture cool.
- Preheat convection oven to 400 degree F or air fryer to 375.
- Lay out your vegan egg roll wrappers on a wooden board one at a time. Add filling and roll up like egg rolls/burritos, dabbing the last edges with water (with your finger) to close them up securely.
- Lay filled rolls on a parchment-lined pan and brush the tops lightly with the soy milk, then sprinkle with the cinnamon-sugar mixture. Air fry/bake until the apple egg rolls are crispy on the outside.
- Serve warm with "nice" cream or vegan ice cream.
